I am living in the UK now, so I will not have a traditional Easter as we have in Slovakia, but at least I have prepared traditional food: potato salad with smoked ham.
There is tradition in Slovakia, that on Easter Monday men spank women with homemade whip and splash cold water on them. It is believed that women will be healthy, beautiful and full of energy for the rest of the year. Very interesting tradition... And believe me, girls do not like this :) After this all men will get sweets or nice colorful eggs.
Easter is about meeting with people you like and eating a lot of nice food. Enjoy it! :)
I wanted to do some nice banana bread or something similar, something what you can eat for breakfast or if you need some snacking, just something nice.. :) I am not a big fan of baking, I am not patient at all, so let`s say no baking at all. I was going through Everyday superfood book from Jamie Oliver and I saw there this banana - fig bread. It looks so easy to make that I decided to try.
Sometimes people see a lot of ingredients in the recipe and it discourages them and do not even read it till the end.
This bread is very easy to make, this is how I made it: Put in food processor 2 eggs, 4 bananas, 200g of dried figs, 125 g of natural yogurt, vanilla extract, 75ml of rapeseed oil and mix all together. Then add 150 grams of wholemeal flour, 1tbsp of baking powder, grated apple and some seeds (etc poppy seeds, chia seeds or pumpkin seeds). Pour it into a baking tray and sprinkle with walnuts. Bake it for 45 minutes for 180C.

I have for you an amazing tip for grilled peppers with pomegranate and cheese. It is easy and you will not believe how tasty it can be. I found this recipe in one of Nigella`s book. Here is how I made it:
Preheat your oven to 250 C. Red or yellow peppers are best to use, because they are sweet. Cut them in halves, remove seeds and place them on a baking tray. Put them in the oven and leave it there for 15 minutes or until skin is black. When they are done, place them in a big bowl, cover with kitchen foil and let them cool till you can touch them. Remove gently skin from peppers and place them on another plate. Sprinkle it with pomegranate seeds.
In another bowl, mix together juice from pomegranate with squeezed lime, olive oil and crushed garlic. Pour this dressing over your peppers and season with salt if needed. Serve it with cheese, the best one is goat cheese or feta.
